From the bustling streets of London to the serene orchards of Kerala, CoChilli Caterers presents a dish that melds two worlds together, capturing the spirit of culinary innovation and tradition.
Ingredients

200g Raw mango (40%), cut into small cubes

300g Semi Ripe Mango (60%), cut into small cubes

100g Deseeded cucumber, cut into small cubes

50g Red onion, cut into small cubes

A handful of freshly chopped coriander (about 20g
-
A handful of freshly chopped flat leaf parsley (about 20g)

Juice of 1 lemon (approx. 50ml)

30ml Distilled vinegar
-
Salt and pepper to taste (suggest starting with 5g each and adjusting)

15 - 30g Red chilli paste (adjust to preference)

100g Shredded romaine lettuce for serving

Garnish : 50g Fresh pomegranate seeds
Directions
- Red Chilli Paste: Boil fresh red chillies in a mix of 20% distilled vinegar (about 20ml) and 80% water (about 80ml). Once softened, blend into a fine paste.
- In a bowl, mix mangoes, cucumber, and red onion.
- Fold in coriander and parsley.
Add lemon juice and distilled vinegar.
Season with salt and pepper.
Mix in the red chilli paste for a spicy kick.
- Serve on a bed of romaine lettuce and garnish with pomegranate seeds.
